This is one seriously good recipe. I love this stuff. It's one of those meals that you can just keep eating and eating. Add chicken to change it up too.
Crunchy Coleslaw
1 bag coleslaw
2-3 green onions, chopped
1/2 stick butter
sliced almonds (half of a 10 oz. bag)
2 pkgs. Ramen noodles (discard flavoring packet)
1/4 cup white vinegar
1/2 cup sugar
1/2 cup vegetable oil
2 tsp. soy sauce
Here's the plan of action:
Saute almonds and crushed noodles in melted butter in frying pan until well
browned. Place in bowl, cover, and refrigerate. Combine vinegar, oil,
sugar, and soy sauce. refrigerate. Just before serving, toss together
cabbage, onions, and noodles with the dressing mixture.
I make a similar version, but I skip the butter and don't sautee anything. I also reduce the oil to 1/4 C, cut the sugar in half, and add a bit of Splenda. It's one of my husband's faves! I love it too!
